Saying the Quiet Part Out Loud

What was the movie or show, I wonder - something Disney? I see Jim Backus 'singing' bass, but it's really Thurl Ravenscroft ('Mr Grinch') - I think I would know that bass anywhere. And it looks like maybe Jerry Van Dyke singing tenor.
"A little more schmaltz on the harmony!" I wonder what that was intended to mean. I know it's a Jewish/Yiddish word for a dish made of rendered chicken fat, but the metaphor eludes me.
The rich chicken fat in the foods led to a metaphor about excessive sentimentality.
